I'm Tom. I'm passionate about regenerative horticulture and its myriad planetary implications. I love food from seed to plate. I have a science-oriented nature with an adaptable and problem-solving approach to stretching the resources nature has provided us. I'm resourceful at diversifying income, and streamlining energy and finances in day to day operations. My overarching goal of maximizing beneficial biology permeates everything I do. I'm a motivated team player, with exceptional interpersonal skills and a drive to take on new challenges.

  • Weaved together the dynamic requirements of an intensive market garden; seedling propagation and greenhouse management, planning and transplanting out diverse poly-crop guilds and monitoring their growth, composting community food waste separate from bio-intensive 'static pile' composts, weekly foliar feeding, data collection, biological controls for pests, analyzing soil test results with our agronomist, striving for high BRIX/nutrient dense vegetables that are pest resistant, personally developed integration of mushroom production, etc.
  • Grew into a speaking & teaching role within both our week-long regenerative horticulture course, and team experiences for businesses and other gardeners.
  • Developed close relationships with our CSA members (both families and restaurants), and the various stakeholders & members of the public that come with being in the heart of NZ's largest city.

  • Part of the original FOH team to open Candela Wine Bar, which quickly won Viva magazine's Top 50 Auckland restaurants 2022, landed high on Denizen magazine's Top 50 and was awarded the first ICEX certification in Australasia.
  • Managed large sections of the restaurant, including greeting and seating customers and large groups, course timing of set menus and knowledgeable pairing advice about the extensive wine menu. High level of communication with both the kitchen and the food running staff.
  • Assisted in training new front-of-house staff on proper service techniques and procedures.

  • My first hospitality job, I jumped in the deep end being hired as a section waiter for Lebanese fine dining. I quickly learned the ins and outs of fast-paced service in this 1 Hat, family owned restaurant.
  • I loved the highly social environment and close relationships I developed with both the kitchen staff and the FOH which I still hold to this day. Learned the value of efficient communication, how to slot into a well-oiled machine and how to course-correct & keep a cool head when something goes wrong.
